High Protein, high fibre Apple pie Oats Crumble (30g protein + 10g fibre + 10 min in the air fryer!)

Although I always recommend starting your day with a high protein, high fibre savoury breakfast to support stable blood sugar and energy levels throughout the day… sometimes you just crave something a little sweeter, warmer and comforting on a cold winter morning!

This Apple Pie Protein Oats Crumble gives you the best of both worlds: almost 30g of protein and about 10g of fibre to keep you feeling full, satisfied, and your gut happy.


Why is this gut-friendly?

  • The apple provides pectin, a type of soluble fibre that acts as a prebiotic: feeding your beneficial gut bacteria and supporting digestion.

  • Oats contain beta-glucans, a special fibre that helps lower cholesterol, support gut health, and keep blood sugar levels steady.

  • Ground flaxseed & psyllium husk add extra soluble fibre, which helps to feed gut microbes, improve bowel regularity, and support a healthy gut lining.

  • Plus the protein content helps balance this meal, helping to slow digestion and promoting better blood sugar balance. 


Ingredients: 

Apple Base:

  • ½ cup of stewed apples, if time poor use canned pie apple (but make sure it unsweetened and 100% apples only).

  • A few dashes of cinnamon to your liking.

  • ½ tsp vanilla extract. 

Crumble Topping:

  • ¼ cup (25g) rolled oats

  • 1 scoop (30g) vanilla protein powder (whey or plant-based)

  • 2 tsp ground flaxseed

  • 1 tsp psyllium husk

  • 1 tbsp almond meal

  • 1 tsp maple syrup or monk fruit sweetener (optional)

  • 2 tbsp milk of your choice.

Topping (after baking):

  • 2-3 tbsp Greek yoghurt (use a high protein option if possible)

  • Extra cinnamon to serve


Method:

  1. Preheat air fryer to 160°C (if needed).

  2. In a small bowl, mix the pie apple, cinnamon and vanilla. Spread into a greased ramekin or small oven-safe dish that fits your air fryer basket.

  3. In another bowl, combine oats, protein powder, flaxseed, psyllium, almond meal, and sweetener. Stir through the milk — the mix should be crumbly but hold shape.

  4. Crumble this mixture evenly over the apple layer.

  5. Air fry at 160°C for 10–12 minutes until the top is golden and slightly crisp. Check at 8–10 mins to avoid over-browning (cover loosely with foil if needed).

  6. Cool slightly and top with Greek yoghurt and extra cinnamon. Enjoy warm!
